Banana Cherry “faux” Custard Muffins

  • Avocado spray oil
  • 3/4 cup frozen organic pitted cherries, thawed, halved and well drained
  • 3 very ripe bananas
  • 1/2 tsp vanilla extract
  • 4 large eggs


  1. Preheat oven to 375
  2. Spray muffin tin cups with cooking spray
  3. Put the bananas in a bowl and mash them with a fork thoroughly
  4. Add the vanilla
  5. Add the eggs and whisk until well beaten
  6. Divide the cherries evenly amount the muffin cups, then pour in the banana “custard”. Fill each cup 3/4 full
  7. Bake until muffins are set, 12-14 minutes
  8. Run a thin knife around the edge of each muffin and remove once cooled
