Arugula Summer Salad

  • 8 Oz. Arugula
  • 5-6 Radishes (sliced thin)
  • Handful of spinach (optional)
  • 1/4 lb. chunk of Parmesan, merlot or black pepper cheese
  • Lemon Vinaigrette:
  • 1/3 cup freshly squeezed lemon juice (about 2 whole lemons)
  • 2/3 cup Organic Extra Virgin Olive Oil
  • 3-5 Cloves of garlic (minced)
  • 1 tsp. Salt
  • 1/2 tsp. Pepper


  1. Put up arugula, spinach and sliced radishes in bowl. Make the dressing - Mix lemon juice, olive oil, garlic, salt and pepper. Whisk together well and pour over arugula and spinach, mix well. Whatever cheese you choose to use, just make sure it is a hard cheese. Use a vegetable peeler to create ribbons of cheese on top. ENJOY!
